The emphasis is on manual methods including ploughing, green harvest, if necessary, thinning of leaves and bunches. The fruit undergoes a pre-fermentation soak (14 -16° C for 3 - 6 days) in temperature-controlled vats, avoiding over-maceration to limit extraction of green tannin ; all wines are aged in Châtillonnais oak . 50% new oak for all wines except Estournelles and Charmes-Chambertin which see 100% new oak.
